It was recently pointed out to me that my website lacks cake recipes. Well the reason is, I not a very good baker.
Now I love food, love to cook and love to eat. It’s just that baking is more precise, and it scares me a bit.
I also don’t have a sweet tooth so that helps. Before I go on about baking and share a delicious recipe, I want to share a quick story.
I once told a former colleague that I would rather have a good dill pickle than a donut any day. And guess what, when I left that job, she bought me a big jar of pickles as a going away present. We had a great laugh and I every time I ate one of those pickles I thought of Shirley.
Anyway, this last weekend I decided to face my fears, dust off my baking pans, and bake an awesome chocolate cake. A delicious cake made with some very special ingredients that make it ultra-moist, not too sweet and nutritious.
So, the secret ingredient in this cake is BEETS. Now don’t turn your nose up…. hear me out because the cake is truly delicious, and you won’t believe how great it is.
The beets add moisture and sweetness to the cake. And just so you’ll know, it does not taste like salad or dirt!
Actually, the beets play up the deep chocolate flavor, it’s almost magical!
The cake batter will be a purple-brownish color and will bake into a moist chocolate cake with no trace taste of beets. I repeat no trace of beets.
As I said before the cake is moist, wickedly chocolate and not too sweet. Seriously, no one would ever know the major ingredient in this cake is vegetables.
Oh….and let me talk a little about the frosting. Which is totally optional. It is made with avocado, maple syrup and cocoa, sprinkled with salt flakes (optional). To sum up this cake, it is not only the healthiest cake you’ll ever taste but probably one of the most delicious too.
