This is so easy….and so yummy!
- 3 1/2 cups black beans (2 cans well rinsed)
- 8 ounce white corn (I use frozen)
- 1 container fresh salsa
- 1/2 cup chopped cilantro
- 2 tbs. cumin
- 1 avocado chopped
- 1 tbs. red wine vinegar
- 4 tbs. lime juice
- 1 zest of a whole lime
- 2 tbs. olive oil
- 1 tsp. salt
- 1/2 tsp. pepper
Combine all ingredients in a bowl and cover and chill.
Enjoy on a large fresh green salad made with lime dressing (recipe below)
Lime dressing: 3/4 c olive oil; 1/4 c. fresh
lime juice; 1 tsp salt; 1/2 tsp pepper; 1 small shallot diced; 1/2 tsp
mustard. Put all ingredients in the
blender and blend.
