Balsamic Chicken and Veggies
1/2 c olive oil
1/4 c balsamic vinegar
3 cloves of garlic pressed
1 tsp. salt
½ tsp. pepper
1 whole chicken cut up
1 yellow squash
1 red or white onion
4 cloves garlic peeled
12 grape tomatoes
1 package mushrooms cleaned
1 sweet potato cubed
2 medium potatoes cubed
Make dressing by mixing first 5 ingredients in a mixing cup.
Wash and cut vegetables into cubes. Wash, scrub and cube potatoes. Peel garlic and leave whole. Peel onion and cut in quarters.
Place veggies, excluding potatoes, into a large bowl and pour 1/3 of the dressing over veggies. Toss to coat and place veggies in a roasting pan.
Place potatoes in a bowl and pour 1/3 of the dressing over potatoes and toss to coat.
Place chicken in a large roasting pan with potatoes. Pour remaining dressing over chicken and potatoes.
Place chicken and potatoes in the oven and cook for 15 minutes then put the veggies in the oven and cook everything for another 15 minutes.
Remove veggies from the oven, toss and return to the oven. Continue cooking everything for another 10 minutes or until desired doneness.
