Protein Packed Banana Nut Bread
Ingredients
- 3 very ripe bananas
- 8 eggs
- 1 ½ tsp. vanilla extract
- ¾ cup coconut milk
- ¾ cup almond flour
- ¾ cup coconut flour
- ½ cup flax seed
- 3 tsp. cinnamon
- 1 ½ tsp. baking soda
- ¼ tsp. salt
- ¾ cup nuts
- 1 ½ tablespoons melted coconut oil
Instructions
- Preheat over 350
- Using a food processor, puree the bananas. Add remaining ingredients EXCEPT nuts and blend until smooth.
- Pour into a greased or parchment paper lined 8 x 10-inch baking pan. Carefully mix in nuts.
- Bake for 40-45 minutes.
- Cut into 8 pieces. 2 pieces = 1 FEAST Academy breakfast serving
- This stores nicely in the refrigerator for up to a week or you can freeze the individual servings, defrost overnight and pop in the toaster oven for breakfast.
