Protein Packed Banana Nut Bread

Ingredients

  • 3 very ripe bananas
  • 8 eggs
  • 1 ½ tsp. vanilla extract
  • ¾ cup coconut milk
  • ¾ cup almond flour
  • ¾ cup coconut flour
  • ½ cup flax seed
  • 3 tsp. cinnamon
  • 1 ½ tsp. baking soda
  • ¼ tsp. salt
  • ¾ cup nuts
  • 1 ½ tablespoons melted coconut oil

Instructions

  • Preheat over 350
  • Using a food processor, puree the bananas. Add remaining ingredients EXCEPT nuts and blend until smooth.
  • Pour into a greased or parchment paper lined 8 x 10-inch baking pan. Carefully mix in nuts.
  • Bake for 40-45 minutes.
  • Cut into 8 pieces. 2 pieces = 1 FEAST Academy breakfast serving
  • This stores nicely in the refrigerator for up to a week or you can freeze the individual servings, defrost overnight and pop in the toaster oven for breakfast.
