Creamy Mushroom and Ground Beef Soup HM


  • 1- pound mushroom cleaned stemmed and quartered
  • 1 tablespoon coconut oil
  • 1 teaspoon thyme chopped 1/2-pound ground beef
  • 3 cups beef bone broth
  • 4 cloves garlic crushed
  • 5 cups spinach chopped
  • 1 cup full fat coconut milk
  • sea salt and ground black pepper to taste


  • Melt the butter or coconut oil in a soup pan. Add the onion, mushrooms, and thyme. Cook until onion is translucent. Add ground beef and brown in large chunks. Once beef is cooked add in broth, crushed garlic, and greens. Cook the greens down and bring to a boil. Take off the heat and add in the coconut milk and salt and pepper to taste.
