Kale, Quinoa Salad (with watermelon radish)

 

Ingredients for the Salad:

1 large bunch of kale, washed, stemmed and ripped into bite sized pieces

½ tsp. salt.

1 avocado peeled and cubed

4 thin slices of sweet onion

¼ cup chopped watermelon radish

½ cup chopped feta (I prefer sheep’s milk feta)

1 cup cooked quinoa

Ingredients for the tahini dressing:

1/4 cup lemon juice

1/3 cup olive oil

3 tbs. tahini

2 tbs. red wine vinegar

2 cloves of garlic

1 tsp. salt

1 tsp. black pepper

To make the dressing:

Blend all ingredients in a blender until smooth.

To make the salad:

Place the kale in a salad bowl, drizzle with 3 tablespoons of salad dressing and ½ tsp. salt.  Massage the salt and dressing into the kale.  Let it sit for about a ½ hour.  Then add the remaining ingredients and toss with the remaining dressing.  You may want to salt and pepper to taste.
