- ½ cup pureed pumpkin (not pumpkin pie filling)
- ½ tsp cinnamon (or ¼ tsp pumpkin spice + ¼ tsp cinnamon)
- ½ tsp baking powder
- 4 eggs
- 1 cup uncooked oats pulverized in your blender or food processor
- ½ cup + 2 tbs.water
- 1 tablespoon avocado oil or melted coconut oil or butter
- 4 teaspoons honey or maple syrup
Blend ingredients together in a blender or food processor and cook as you would any type of pancakes.
