Pumpkin Protein Pancakes

    • ½ cup pureed pumpkin (not pumpkin pie filling)
    • ½ tsp cinnamon (or ¼ tsp pumpkin spice + ¼ tsp cinnamon)
    • ½ tsp baking powder
    • 4 eggs
    • 1 cup uncooked oats pulverized in your blender or food processor
    • ½ cup + 2 tbs.water
    • 1 tablespoon avocado oil or melted coconut oil or butter
    • 4 teaspoons honey or maple syrup

Blend ingredients together in a blender or food processor and cook as you would any type of pancakes.
