Ingredients:
- quinoa
- ½ cup chopped fresh parsley or cilantro
- ½ cup pine nuts or chopped walnuts
- zest of an ½ an orange
- ½ of a peeled orange cut up into small pieces
- juice of the other ½ of orange
- 1+ tablespoons olive oil
- 1+ teaspoons red wine vinegar
- salt and pepper to taste
Cook quinoa according to the package for 4 servings. While quinoa is cooking prepare other ingredients and place in a bowl. Once quinoa is cooked and cooled, place cooled, cooked quinoa and nuts in the bowl and mix. Serve and enjoy.
