Quinoa Pilaf

Preparation time:  5 minutes

Cooking time:  15 minutes


  • quinoa
  • ½ cup chopped fresh parsley or cilantro
  • ½ cup pine nuts or chopped walnuts
  • zest of an ½ an orange
  • ½ of a peeled orange cut up into small pieces
  • juice of the other ½ of orange
  • 1+ tablespoons olive oil
  • 1+ teaspoons red wine vinegar
  • salt and pepper to taste

Cook quinoa according to the package for 4 servings.  While quinoa is cooking prepare other ingredients and place in a bowl.  Once quinoa is cooked and cooled, place cooled, cooked quinoa and nuts in the bowl and mix.  Serve and enjoy.
