Baked Potato Fries with Garlic, Pecorino Cheese and Rosemary

Serves 2


4 small potatoes scrubbed

2 cloves garlic crushed

3 tablespoons olive oil

¼ cup grated pecorino Romano cheese

1 tablespoon crushed dried rosemary


Preheat oven 450 degrees

Cut the potatoes as desired to make the sized fries that you would like.  Place the last 4 ingredients in a large bowl.  Add the potatoes and toss with your hands until potatoes are well coated.

Line a large roasting pan with parchment paper.  Place the coated potatoes in a single layer on the parchment paper and place in the over.   Cook for about 10 minutes and take out of the over.  Using a spatula turn the potatoes over and place the pan back in the oven for about another 10 minutes or until crispy to the way you like them.
