Blueberry, Ginger Coconut Cream Parfait

  • 1 can Full Fat Organic Coconut Milk Refrigerated
  • 2 containers fresh blueberries washed and cleaned
  • 2-4 tbsp grated fresh ginger
  • 1 tsp honey optional


  • Drain the liquid from the bottom of the coconut milk. Whip the solid contents of the two cans of coconut milk with the ginger and honey (optional) in a high speed blender. Be careful not to over whip.
  • Divide the blueberries between 4 bowls.
  • Top with coconut cream
