Blueberry, Ginger Coconut Cream Parfait
- 1 can Full Fat Organic Coconut Milk Refrigerated
- 2 containers fresh blueberries washed and cleaned
- 2-4 tbsp grated fresh ginger
- 1 tsp honey optional
- Drain the liquid from the bottom of the coconut milk. Whip the solid contents of the two cans of coconut milk with the ginger and honey (optional) in a high speed blender. Be careful not to over whip.
- Divide the blueberries between 4 bowls.
