Blueberry Lemon Cashew Ice Cream

1 Cup fresh Blueberries

Zest of ½ lemon

¼ cup honey

1 tablespoon vodka

1 1/2 cups cashew cream

Make  Cashew Cream using this recipe:

1 cup raw cashews

1 cup water


Soak the cashews overnight in a bowl with enough water to come 1/2 inch over the top of the nuts.

Drain and rinse. Place the cashews in a blender with 2 cups cold water and blend until smooth.

Slowly fold above ingredients into the cashew cream.  Pour into a freezable container and freeze.

Remove from freezer 10 minutes before eating.  Enjoy.

TIP:  If you don’t have time to soak your cashews you can boil them for 20 minutes, drain and cool.  Then follow the directions above.
