Creamy Mushroom and Ground Beef Soup with Greens

Serves 4

Preparation time: 10 minutes

Cooking time 15 minutes

Ingredients:

One large onion chopped

1 lb. mushrooms, cleaned, stemmed and quartered

1 tbs. butter or coconut oil

1 tsp. chopped thyme

½ lb. ground beef

1/2 cup cooked brown rice

3-4 cups beef broth

4 cloves of garlic crushed

4-5 cups chopped greens of your choice

1 cup cashew cream or coconut milk (click here for cashew cream recipe)

Salt and pepper to taste

Instructions:

Melt the butter or coconut oil in a soup pan. Add the onion, mushrooms and thyme. Cook until onion is translucent. Add ground beef and brown in large chunks. Once beef is cooked add in broth, crushed garlic, cooked rice and greens. Cook the greens down and bring to a boil. Take off the heat and add in the cashew cream or coconut milk and salt and pepper to taste.
