This recipe is a great alternative to serving potato chips. It is certainly more nutritious. Potatoes are a good source of B6, potassium, vitamin C, full of dietary fiber and are a classic comfort food.
Ingredients:
1 package small red potatoes
1 tablespoon oil
1 clove garlic crushed
1 teaspoon salt
½ teaspoon chili powder
¾ cup guacamole
1/3 cup salsa
1 cup chopped cilantro
4 scallions chopped
Preheat oven to 450 degrees.
Wash the potatoes, drain and pat dry.
Place the oil, crushed garlic, chili powder and salt in a large mixing bowl and mix. Add the potatoes and toss to coat.
Place the potatoes in a single layer on a parchment paper lined roasting pan and roast until done (about 30 minutes). Take a spoon and smash each potato. Place under the broiler for just a few minutes to get the outside crispy.
Transfer potatoes to a serving dish. Top each smashed potato with a little salt, chopped cilantro (saving some to sprinkle on top), guacamole and salsa. Sprinkle each potato with chopped scallions and cilantro. Yummmmm…
