Yields: 2 servings
- 2 cups rolled oats-pulverized in your blender
- 4 eggs
- 2 tbs. ground flaxseed
- 1/2 cup water
- 1 banana (or substitute 1/2 cup pumpkin)
- 2 tablespoons honey
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 2 teaspoons oil
Place rolled oats in the blender and pulverize to small pieces. Place remaining ingredients in a blender and blend until smooth. Let stand a few minutes until batter thickens.
If batter is too thick to pour easily, add some water.
Heat skillet and lightly oil.
Pour batter, by 1/4 – 1/2 cup, into pan and cook for 2-3 minutes on each side.
Try adding chopped walnuts to the pancake batter.
