Quinoa Pilaf

Cook quinoa according to the package for 4 servings

½ cup chopped fresh parsley

½ cup chopped walnuts

½ of a peeled orange cut up.

Juice of the other ½ of orange

1 tablespoon olive oil

1 teaspoon red wine vinegar

Salt and pepper to taste

Place cooked quinoa and all other ingredients in a bowl and mix.  Serve and enjoy.
