Red Cabbage, Feta, Date Salad
Ingredients
- 1 small head red cabbage slice very thin
- 4-5 tablespoons olive oil
- 1 tablespoon toasted sesame seed or walnut oil
- 2 tablespoons lime or lemon juice
- Salt to taste
- Sprinkle of red pepper flakes
- About 1/2 cup pitted dried dates or figs, coarsely chopped or sliced
- 4 ounces feta crumbled into chunks
- ½ cup chopped walnuts
Instructions
- Slice cabbage and place in a bowl. Add oils, lemon juice, salt, red pepper flakes and toss to coat the cabbage. Let stand 15 minutes. Just before serving add dates, nuts and feta. Mix and enjoy.
