Rice Pudding

Rice Pudding1 cup cooked brown rice

¾ cup coconut milk

½ tsp. cinnamon

¼ tsp. ground cardamom

¼ cup raisins

1 tbs. honey

Place all ingredients in a pot and bring to a boil. Reduce heat and simmer, stirring occasionally. Continue cooking until raisins are plumb and most of the liquid has evaporated.  Serve warm.
