Roasted Garlic Pecorino Carrots


  •  4 large carrots peeled and cut in half and quarters
  •  4 teaspoons minced garlic
  •  1 tablespoon olive oil
  •  2 tablespoons butter melted
  •  6 tablespoons grated pecorino cheese
  •  1/2 teaspoon dried oregano
  •  ½ teaspoon dried thyme


  • reheat your oven to 400ºF
  • Peel and cut carrots in half and then quarters. Place all ingredients in a bowl and toss to mix well. Line a baking dish with parchment paper and arrange carrots on bottom. Bake for 30 minutes (roasting time will depend on the thickness of your carrots). Serve warm and sprinkle with pecorino cheese before serving.
