Ingredients for sauce:
1/4 cup olive oil
2 tablespoons lemon juice
3 cloves garlic
1 small jar roasted red peppers drained and rinsed
Ingredients for beans:
1/2 cup finely chopped onions
1/2 teaspoon chopped oregano or ¼ teaspoon dry
2 cups cooked or 1 (15-ounce can) cannellini beans rinsed well and drained
2 tablespoons oil & 1/2 cup water & Salt and pepper to taste
Instructions for sauce:
Place oil, lemon juice, garlic and peppers into a blender and process until smooth;
Instructions for beans:
Place onions, garlic and oil in a pan and quickly cook until onions only begin to soften but remain a bit crunchy. Add beans, salt, pepper, oregano and water and cook thru to warm the beans.
Add sauce to the beans and toss gently to coat. Serve immediately or at room temperature.
These are delicious served with sautéed greens or a big green salad.
