Seasoned Cauliflower Rice

This recipe is so easy and FAST.  It took me about 10 minutes to make.

It is bursting with flavor and I was conservative with the spices I used.   If you try it please let me know what you think.

Ingredients

  • 1 head Cauliflower
  • 1 Tbs. chopped fresh cilantro
  • 3 cloves Garlic
  • 1 Orange pepper
  • 1 Red pepper
  • 1/ Red onion
  • 1 tsp. cumin
  • ½ tsp. hot chili powder
  • 2 tsp salt
  • Juice of ½ lime
  • 3 Tbs. grape-seed oil

Clean, slice peppers.  Skin onion and garlic then slice thinly.  Sauté onions, garlic and peppers in 2 the 2 Tbs. oil in a large frying pan until soft.  Add ½ tsp. salt and remove from pan to rest on a plate.

 

Meanwhile rice the cauliflower in a food processor by cutting it in small pieces and pulsing until it resembles rice.  I did this in batches.

Add remaining oil to the frying pan and add the cauliflower rice to the pan.  Mix in cumin, chili powder, and salt.  Quickly warm thru scraping the bottom on the pan (maybe 2-3 minutes).

Place cauliflower rice in a bowl, squeeze in lime juice and add in cilantro.  Mix well.  Either fold in peppers and onions or service on top.

 

I served this dish with a pesto and spinach stuffed pork loin (will post recipe soon) and a small amount of brown rice with salsa.  It was yummy.

Sticking to my motto of cook once and eat twice I will certainly have plenty leftover for lunch and one more dinner.
