Sesame Garlic Roasted Root Veggies


3 large carrots-scrubbed

2-3 small turnip peeled

3 potatoes-scrubbed

1 large sweet potato-scrubbed

3 parsnips peeled

1 large onion peeled

2 garlic cloves, finely chopped
3-4 tablespoons olive oil

1/2-1 teaspoon sesame seed oil
2 teaspoons Gamasio Salt (or any salt)
1/2 teaspoon coarsely-ground black pepper

Prep time:  10 minutes

Cook time:  30-45 minutes


Preheat oven to 400°F. Cut veggies into 2-inch pieces. Place everything in a large bowl and massage oil, salt, pepper, garlic with veggies. Spread in a single layer in a non-stick baking dish, or parchment paper lined rimmed baking sheet.

Bake approximately 30-45 minutes, turning every 10 minutes, or until vegetables are browned or caramelized on edges and tender. Remove from oven and serve warm or at room temperature.
