Spinach Quinoa Pilaf

Spinach Quinoa Pilaf

Serves 4

Cooking time 20 minutes

Ingredients:

1 tbs. olive oil

1/2 cup finely chopped onion

1 clove garlic crushed and chopped

1 cup quinoa, rinsed and drained

2 cups water

1/2 tsp. salt

2 cups packed baby spinach

2 large tomatoes chopped

1/4 tsp. black pepper

Heat 1 tbs. oil in a saucepan and add onion, garlic, and tomatoes and cook stirring often until about, 2-3 minutes.  Add quinoa, water, and salt, pepper and bring to a boil.  Reduce heat to medium-low cover and simmer 15 minutes.   Remove cover and stir in spinach, cover and continue to cook until liquid is completely absorbed and quinoa is tender, about 3 minutes longer.
