- 1 clove garlic
- 4 tablespoons sugar free peanut butter
- Juice of 1 lime
- 1 teaspoon grated ginger
- 4 tablespoons of tamari soy sauce
- 3 tablespoons chopped cilantro
- ½ teaspoon red pepper flakes
- ¼ teaspoon toasted sesame seed oil
- Warm water
- 3 scallions chopped
- ½ cup chopped cilantro
Place ingredients 1-10 in a blender and add in a small amount of warm water. Blend until well mixed then add in enough warm water to make the sauce the consistency you would like.
You may want your sauce to be thicker if it is going on veggies that are watery or cooked like cucumber or zucchini zoodles.
Drizzle the sauce over whatever you are serving then sprinkle on the chopped scallions and cilantro and toss to mix.
I have served this with cucumber zoodles as a side dish. As a main dish I served it over cooked chicken and steamed zucchini zoodles. I also used some left over as a salad dressing by just adding a little water.
