Zucchini Noodles with Puttanesca Sauce

Zucchini Noodles with Puttanesca Sauce

1/3 cup olive oil

1 package grape tomatoes halved

1 clove garlic, crushed

Pinch crushed red pepper flakes

1 teaspoon dried oregano

1 teaspoon anchovy paste

¼ cup chopped pitted Kalamata olives

2 tablespoons capers chopped

2 zucchini zoodled into noodles

2-3 tablespoons of water

 

Place all ingredients except your zucchini noodles into a saucepan and cook on low for 15-20 minutes, stirring occasionally.

Place your zucchini noodles on top of the sauce, add the water and cover.  Cook for about 5 minutes until the zucchini noodles are warmed through.  Gently fold the sauce into the noodles and serve.
