1 cup raw cashews soaked overnight
½ cup water +/-
Juice of a lemon
3 garlic cloves
1 tbs. red onion
Optional: and/or a small amount of any of these:
parsley, dill, oregano, cut up green or red pepper
Put all ingredients in a blender and blend until smooth.
I served this with a salad. It would be amazing as a dip for a crudité platter.
